Menu Plan Monday- Week of June 21, 2010

I just wanted to highlight some great recipes from last week:

The Strawberry Salad was just about the best thing I've tasted in a LONG time! I used Cashews because that is what I had. I also added a rotisserie chicken that we got from Whole Foods...delicious mixed into the girls loved it!

Strawberry Salad with Shallot-Honey Vinaigrette Recipe

If you eat Pork, the Asian Pork Tenderloin was made the pork so tender and juicy. I ended up taking the leftover marinate..(I didn't pour any into the dish) and reduced it down to make a gravy..I just added a little chicken stock and it thickened right up! I didn't have any of the Asian Chili Paste, so I just used Red Pepper Flakes... my husband added more, but it was perfect for the little ones!

This weeks produce share will include:
Red Leaf Lettuce
Yellow Squash
Roma Tomatoes
Cremini Mushrooms
Yellow Peaches
Valencia Oranges

Fruit Share:
Sugar Baby Watermelons, Golden Pineapples and

Breakfasts: Oatmeal Bake ( w/ yellow peaches and bananas mmmm!), Baked Pancake, Eggs & Toast, Vegetable Frittata

Lunches: Chicken Salad, Leftovers, and Macaroni and Cheese with Peas

Snacks: Veggies, Fruit, Kefir Smoothies, Playgroup Granola Bars


Monday: Egg Salad Sandwiches (Uses Green Onions) with Nutty Brown Rice Salad

Tuesday: Strawberry Salad with Shallot Honey Vinaigrette ( have to make it again! (Uses Shallots, Strawberries and I use the Red Leaf Lettuce) Served with Cous Cous and Grilled Eggplant

Wednesday: Carne Asada Tacos (we chop up Cilantro and Tomatoes)

Thursday: Grilled Chicken with Jicama, Carrot and Green Apple Slaw (uses Daikon Radish)

Friday: Summer Squash w/ Rice and Chicken

Saturday: Easy Baked Tilapia (Uses Cauliflower)

Sunday: Veggie Pot Pie (put in any veggie you like!) I like to put in one sliced cooked chicken breast for protein

Menu Plan Monday- Week of June 14, 2010

Here is the menu plan for this week:
We're really loving the Oatmeal bake (recipe below)- I highly recommend this one, it lasts our family 2 days! You can also decrease the sugar to your liking...
Don't forget- Your grill and slow cooker can be great tools to get you through the hot summers without heating up your kitchen.... check out the grilled pizza below!

What we have left in our fridge:
Juice Carrots
Red Leaf Lettuce
Green Onions
Tommy Atkins Mangoes

Breakfasts: Oatmeal Bake, Eggs & Toast, Pancakes, Granola

Lunches: Chicken Salad, Leftovers, and Quesadillas

Snacks: Veggies, Fruit, Kefir Smoothies, Hummus


Monday- Baked Ziti- for the girls since it has cheese and Dad doesn't eat it! (We actually have a date night- 7th Anniversary Today)

Tuesday- Asian Pork Tenderloin
( never made from last week)

Wednesday- Marinated Chicken w/ Broccoli and rice (Uses Green Onions)

Thursday- Strawberry Salad w/ Roasted chicken (Uses Shallots, Strawberries)

Friday- Chicken Pizza- dough recipe here

Saturday- Summer Squash w/ Rice and Chicken

Sunday- Nutty Brown Rice Salad (SOOO GOOD) and Beef Kabobs

Thursday: Thai Chicken Curry w/ Pineapple

Friday: Moussaka- uses Eggplant

Saturday: Asian Pork Tenderloin served with Broccoli Crowns

Sunday: Sausage, Kale and White Bean Soup with Fresh Homemade Foccacia Bread

I just recently found out about the Mom's Toolbox blog.
She is encouraging moms to join her in a
90 day endeavor to read the Bible.
I have always wanted to read the bible straight through,
but am really daunted by the fact of doing it in....
