The dirty on Shredded Cheese....(Store Bought of Course)

So I must admit, I buy used to buy already Shredded Cheese... for convenience.  
But, now I don't and I'll tell you why:
Two words, Wood Pulp... that's right, Wood Pulp....
Pretty right? 
Delicious?
I'm not so sure.

I guess if I wanted my own shredded cheese to taste like store bought, I could just have my husband gather up some saw dust and sprinkle into my cheese bag.....yech. 

You won't see 'Wood Pulp' on the ingredients list....it will be called Cellulose. Sounds harmless right? Who doesn't need a little cellulose on their salad. Um, not me when it is coming from wood! 

I've never been one to question authority, like the government or the FDA....
until I started questioning authority
and becoming educated on what my family and myself were really eating.

So my newest plea to you? Buy blocks of cheese...why?
2 Reasons, in the words of this awesome article on this very subject:

  1.  Its cheaper
  2. You can take Wood Pulp off of your list of things you and your family are ingesting.
It's a Win, Win! 
Unfortunately, even Organic Brands like Organic Valley are using this product...
so READ LABELS if you just cannot give up buying Pre-Shredded Cheese.

Our Newest Addition! Plus Our Homebirth Experience




I'd like to introduce everyone to our newest addition...Ezekiel! He was born on Easter Sunday, and we couldn't be more happy. My whole experience with Zeke (what we like to call him) since my pregnancy started has been so different from the girls.

Firstly, I got pregnant with Zeke only about a week or two after having a miscarriage, which was not my intention, but I did have a feeling that God had other plans for me at that time. My first and second trimester nausea wasn't nearly as severe as with the girls, and the birth was almost night and day in comparison.

My husband and I decided to have a home birth this time around based around a few different reasons, but mostly because we felt it was a good fit for us and our family. We quickly found a midwife that we felt would work well with us, and the journey into home birth started.

I am not going to deny that I had my own reservation and fears about home birth, mainly because I felt like I was venturing into the unknown, and the 'situation' would be a little out of my control- which btw, is what I like to be in all-the-time....control. But then I had to remind myself that for the most part, we are never in control....God is.

My midwife recommended that I try to work through my fears BEFORE I actually go into labor (what a novel idea:). This, however, was easier said then done! I found myself having difficulty letting go of the strenuous, almost traumatic labor I had with my second child, who was Posterior and 9lbs....the labor was 12 hours, and I tore terribly. I was so afraid that I would have this same experience again, that it almost paralyzed me from being able to enjoy the rest of my pregnancy with my third.

My midwife also recommended I try Spinning Babies.. an incredible website dedicated to making sure your baby's position is optimal for childbirth. I cannot recommend this site more if you feel your baby is posterior or you are concerned about this. There is a lot of info, but if you just take it one page at a time, it really is very helpful!

The day in-between my 2 due dates, one from ultra-sound and the other from the beginning of pregnancy, I went into labor. It was around 1 am on Easter Sunday, the day when my girls would be singing in front of church for the first time! My first thought was, I hope someone will video tape it for me :(

Around 4am, we called my Mother in Law who was going to be in charge of the girls while I was in labor. Bless her soul, she came over in the middle of the night and slept on the girls' bedroom floor! When the girls awoke around 7am, I was laboring on the couch and they came out and had a 2 minute Easter Egg Hunt, and then Nana scooted them out the door.

I continued to labor for a while, but was noticing longer time periods between contractions. We called our doula, and she came over. Once she got to our house, my labor had almost completely stalled out. We went for a walk, and I was about to think that I had went through 8 hours of labor only to go into labor a different day! We sent the doula home, and my husband suggested we put on a movie...

I was so upset, because I knew I was still dealing with fear/insecurity issues about the homebirth. Our midwife was 45 minutes away, and I had this fear of progressing too fast that she would miss the birth... my husband suggested I call my doula from when we were in California. She is a prayer warrior, and just knows how to speak to my heart and fears...

I called her and started sobbing, begging her to fly across the country to come and help me finish the labor. She prayed for me, told me I had the strength to do it, and by the end of the conversation, I felt a new sense of empowerment, and that God really was in control as He has been all along:)

My labor started up again, this time more consistent and progressively got stronger. My husband put on a movie with Jennifer Lopez who was artificially inseminated, and ended up meeting the man of her dreams right after... I can't think of the movie, but it was pretty darn funny to be watching while I was in labor! That kept us occupied for a while, and we decided to call my mom who was in California waiting with my sister to have her baby(she was 9 days overdue!)

When Brian called her, she laughed and said, "You're kidding, Meghan just came into my room and told me she is in labor!" Hence, the dual labor on opposite sides of the country began. Brian hung up, and I started balling/moaning because I wished I could be there for her. She was there for me for both of my previous births, and I so badly wished that I could be there to support her.

We put another movie on, this time with Johnny Depp and Angelina Jolie (again, the name of the movie escapes me), and I labored on the birthing ball for a while. My contractions were between 4-7 minutes apart pretty regularly, but definitely getting stronger. I shared with my husband that I wanted him to be in charge of 'knowing' when to contact the doula and the midwife. I didn't want to get out of the groove again worrying if it was the right time to call them. Once the movie ended, we put on Colbie Caillat and we danced together in the living room....this will forever be one of the most romantic and amazing experiences I have ever had with my husband. I truly encourage you to experience childbirth and labor with your husband. We will never forget that time alone together. FYI, I gave birth to Zeke while THIS song played..I cry every time I hear it...

Around 3:00, my contractions were pretty strong, and I got in the shower....BEST thing I ever did. I could have stood in there forever! It was about 40 min later that my doula showed up...perfect timing because I knew I was having trouble controlling my breathing in between contractions. She was amazing in talking me through my breathing, and meeting my every need.

It was sometime between 3:00 and 3:30 that I felt the urge to start grunting and what I call 'low moaning', which meant that I was pushing. Brian quickly called the midwife who was a little surprised that we waited this long to call her, but I think Brian was waiting for my contractions to get closer together, which they never did. They stayed approx 4 minutes apart the entire time, sometimes even longer!

When the midwife arrived, the tub was ready and she suggested I get into it. Now, you may think I'm crazy, but I kept asking her if I was REALLY in labor...you would think a woman haivng her 3rd child would know this, but a non-posterior labor is WAY different than a posterior labor which I had with my first 2. The contractions actually had a start and stop, and I could feel the baby moving! My midwife told me that by the sound of my laboring, I was definitely ready to get in the tub and I wouldn't be getting out unless I wanted to.
This was me asking if I REALLY was in labor..ha ha ha

The tub was amazing. Right before, I must have gone into transition because I ended up throwing up everything in my stomach, fairly violently. This is my first indication that I am going through transition. I got in the tub and sat there WITHOUT contractions for about 20 minutes!! I couldn't believe it...I actually thought, " Oh great, here we go again, all this work just to stall out..plus, I have my midwife and doula here for nothing!" It was at that point, they all laughed at me and said, "You are doing fine, and just listen to your body."

I got in the tub around 4:00, and around 4:45, Ezekiel Robert was born! The pushing was so different than my first two. I could actually feel his head moving into position to be born. This stage of labor was actually more difficult because I was trying not to tear and really had to concentrate on pushing 'gently'. I guided his head out myself, which was incredible, and the midwife helped him onto my stomach.

The birth was amazing, and I only have to have 3 stitches which is incredible considering my last two births! Everyone involved in this birth, from my husband, to my bi-coastal doula- Kristen:), to my Florida doula--(Luisa, you were amazing!) and to my more than wonderful and incredible midwife, Connie and her assistant, I couldn't have asked for a more perfect birth! I would completely recommend a home birth if you are thinking about it, and I can honestly say that I have seen both sides, a hospital birth and home birth, and my choice the next time would be home birth again! Note: Everyone must come to their own decision, but know that it should be a 'conscious, informed' decision, not just going along with what the rest of society does because thats what you 'think' its the right thing to do. Mind you, once your baby is born, you don't care where you are...but when I recall my 'experiences', but home birth was way more 'memorable'. Do your research and ultimately you will make the right decision for you, your baby and your family!

Menu Plan Monday- Week of February 22, 2010



If I wasn't inspired to buy grass fed beef from a local farm before seeing Food, Inc., I certainly am now.

The problem is that grass fed beef is VERY expensive. If I am going to move forward with changing my whole meal plans, budget and purchases, its going to take some work to maintain the frugal budget we are on now. I guess this is part of my frustration, my frustration for all Americans....in order to eat healthy, it costs WAY more than eating unhealthy.

My only hope and prayer is that something will change and there will be more restrictions on the types of food that can even be sold...because it is unhealthy. Not to put a downer on this nice Menu Plan post, but this has been a concern of mine even before I saw the movie. I want to provide the best for my family under the budgetary guidelines that we have set up, but doing so is getting harder and harder the more I equip myself with the knowledge of what really makes a healthy diet....more to come on this topic, for now....the menu plan!

Why I am Appauled...

I was just listening to the Diane Rehm show on NPR today and she had on Rick Smith and Bruce Lourie, authors of " Slow Death By Rubber Duck". I have to say, I can't believe how deceived we are as a nation of consumers.


The book is about the infiltration of BPA (Bisphenol-A) in almost everything we use as everyday products in our household. They did an experiment on themselves, mostly using children's plastic containers to eat and drink out of, and found their levels to be 7 times higher!

I started my quest to eat healthier about a year ago, and I felt like I was doing well by my "Made By Me" rule. The problem was that I was still buying canned beans, tomatoes, tomato paste etc...even though they are organic, the manufacturers are STILL USING BPA in the CANS!!!

I can't believe I was naive enough to believe they were out for my best interest. I just assumed the organic companies were not using BPA in their canning and packaging.


The only company found to package without BPA is Eden Organics. They started making BPA free cans and bottling in 1999! 1999! That is more than a decade ago, and the rest of the cooporations can't catch on... Eden claims the cost increase is only 2.2 cents per can, which is a small amount compared to the health risks BPA can cause.


I am ABSOLUTELY only buying Eden Canned Goods from now on.

This brings me to another point, I am going to step up my game, and buy all dry beans from the bulk section. This has been an area where I was slacking because I hate soaking beans overnight, well, I don't hate it, but I hate that I have to remember in order to have food on the table the next day!

This BPA debacle has definitely pushed me to take my healthy eating practices even further... will you join me? If we do this together, maybe it won't be as bad...

Try It Tuesday! Make Your Own Brown Sugar!

Since moving to Florida, for economic AND health reasons, I have totally tweaked our families eating styles. Check out my first blog post here to learn more about how I changed our food budget from $900-1000/ month to only $400 by doing just a few different things!


One thing I noticed is that brown sugar is a lot more expensive than regular sugar. I use the Wholesome Organic Sugar brand.


For most of my baking, I use Sucanat, which is one of the rawest, least processed forms of sugar you can have. It is a good replacement for brown sugar, but sometimes, you just want to have the real thing...brown sugar.




This method is a lot cheaper than buying brown sugar at the store:


Ingredients:
Sugar
Molasses- preferrably Black Strap Molasses because of the health benefits

Mix 1 c. of Sugar to 1 T. Molasses for light brown sugar or 2 T. Molasses for Dark Brown Sugar. Mix with a fork until completely combined...there's your own homemade brown sugar! Why pay more when its so easy to do yourself!

  • Blackstrap Molasses is a very good source of calcium. Calcium, one of the most important minerals in the body, is involved in a variety of physiological activities essential to life, including the ability of the heart and other muscles to contract, blood clotting, the conduction of nerve impulses to and from the brain, regulation of enzyme activity, and cell membrane function. Calcium is needed to form and maintain strong bones and teeth during youth and adolescence, and to help prevent the loss of bone that can occur during menopause and as a result of rheumatoid arthritis. Calcium binds to and removes toxins from the colon, thus reducing the risk of colon cancer, and because it is involved in nerve conduction, may help prevent migraine attacks. Two teaspoons of blackstrap molasses will meet 11.8% of your daily needs for calcium.
  • Contains copper, manganese, potassium and magnesium.

You want to look for a Blackstrap Molasses that is unsulfured since this processing chemical can be an allergen for some. Blackstrap Molasses is what is left after the third boiling of sugar.

Try It! Tuesday... Soap Nuts for Laundry Cleaner!


Well, I am hoping to win this in a giveaway over at Passionate Homemaking (which by the way, is one of my favorite blogs!!) , and if I do I will definitely try it then. I think I can purchase these at our natural food store. Otherwise I will be getting a sample online if I don't win.
Thought I would tell you a little more about them:

They are the only true Natural Laundry Detergent...meaning, NOTHING has been done to them. You can pop them in your laundry right off the tree!! Amazing...skeptical? Maybe a little bit, but the more I hear about them, the more great comments they get that the silly things work! Who's in to try them?

I guess you can also make soap nut liquid detergent yourself as well. This is changing them from their total natural state, but still better than almost anything else out there.

Cinnamon...is beneficial!

I love cinnamon, well I take that back, I love things with cinnamon in it like French Toast....I don't recommend eating cinammon plain, it can do some damage to your salivary glands!! My husband had mentioned something about it helping our bodies to process sugar better. So I thought I would do a little investigating and see how good cinnamon really is for us. I think you will all be pretty satisfied and feel good about eating French Toast, Cinnamon Rolls, Apple Pie, Apple Crisp....well, at least the cinnamon is good for you :)

Here are the top benefits I have found about cinnamon...

  • It can lower your LDL cholesterol
  • It can help regulate your sugar levels in your bloodstream, which helps to decrease your risk for diabetes. ( So, I guess if you HAVE to have sugar, have it with a sprinkle of cinnamon!)
  • It is kind of like a blood thinner to have an anti-clotting effect...good for after giving birth since women are prone to blood clots then.
  • Some studies have shown it to reduce the proliferation of Leukemia and Lymphoma cancer cells. (Also, keep your kids away from an all hotdog diet....the nitrates have been linked to childhood Leukemia)
  • 1/2 t. of cinnamon, and 1/2 t. of honey every morning has been found to decrease symptoms of arthritis.
  • It acts as a natural food preservative.
  • It fights E.Coli in juices
  • It naturally has manganese, iron, calcium and fiber....go cinnamon!
  • Smelling cinnamon helps brain function...I could use a little sniff today :)
  • Improves colon health and helps against heart disease
Here is a recipes for Picadillo which we have once a week! Its my easy go-to meal. This recipes is off the top of my head, so amounts are to taste:

1 lrg. Onion chopped
2 cloves garlic

1lb of ground beef

1 1/2 tsp. ground Cinnamon

1 tsp. ground cumin

1 t
sp. ground oregano
2 T. tomato paste
1 16 oz can of diced tomatoes w/ juices

1 c. raisins
4-5 large olives sliced (optional)



In a skillet, add some oil and cook onions till translucent over medium high heat. Add garlic, cook for about 30 seconds more. Add cinammon, cumin, oregano and mix into onions and garlic. Add ground beef and brown. Add tomato paste, tomatoes, raisins and olives and simmer on med-low for about 30 min. Serve with Naan Bread or over rice. That's it!! Try It! Tuesday....Kefir....or just try Greek Yogurt


Today is Tuesday, and I am pushing myself to try new things, whether it be recipes, new foods, or just lifestyle changes. My sister recently left us a bottle of kefir, and I am going to try it. I have to admit it kind of scares me a little bit, but the benefits of this little known dairy product are huge:

Try It! Tuesday

I just came from my MOPS group today, and we had an amazing speaker on Nutrition. She spoke about things that are very near and dear to my heart, keeping families healthy through nutrition. I just wanted to tell you about something that I have just signed up for, and you can do it in your area as well.

I have joined a local co-op for produce. This was one of my goals I had set for myself for the year, and it looks like I am finally going to be able to accomplish it. The Co-op I am joining is called the Organic Produce Buying Club of South Florida and they offer bi-monthly pick-ups of produce for $49 a pick-up. I have spoken with a few women who are extremely happy with the quality and freshness of the produce, so I am going to give it a try. I have to pay $98+$20 on the first pick-up because you have to pay ahead for the next delivery, as well as the $20 for the produce bags that you swap back and forth to fill up each time.

So for $118, I can have my very own plethera of local, organic, healthy fruits and vegetables that I know come from a reputable source and I am supporting locally....TRY IT!

Got Ants? Natural Ways to Get Rid of Them

With the rain season coming here in Florida, ants are a huge problem in almost every home here unless they have someone come and spray poison everywhere. We try to keep things as natural as possible here, so getting rid of the ants was high on my priority list. My friend in Pennsylvania is having an ant problem too and also didn't want to spray poison, so I thought I would share some insight on getting rid of ants in an environmentally friendly way: First, you need to find the source of where they are coming in. For us, there are about four or five locations. Second, you need to see how they travel. We have tile floors in our kitchen and often times they are following a straight line either along the wall, or along one of the grout lines in the kitchen. Ants often come in when its raining because they are drowning outside. When that happens, our ant situation goes from manageable to, "Oh my gosh, I just realized that ants make me crazy!"mode.

Chalk Line

One suggestion that I have heard that people swear by is to use a chalk line. Just pull the chalk line wherever you don't want the ants to crossover and put the line down. I haven't tried this one, but many people I have talked to say it truly works, so I thought I would put it down.

Cinnamon or Cayenne Pepper

Just place some of either spice at the source of the ant entrance, and it should deter them. This is a temporary fix and is going to have to be done consistently....


Vinegar
Mix some vinegar & water in a spray bottle, aim and shoot. This is an on-contact way to remove them. I would also think that anything acidic, like lemon juice would work too.

When in doubt, try any of these remedies on this website...its incredible the amount of things you can try!
