Menu Plan Monday- Week of October 24, 2011

The hit of last week was by far the 
Easy Chicken Stew with Apple Recipe

It was like Fall in a Bowl.
I highly recommend it for any of you who are feeling in the
Fall Spirit and want a cozy meal to have together as a family. 
We actually made it twice!
It is wonderful served with a rustic loaf of bread you can tear off and dip.


This week we will be receiving our Produce Share:
GOLDEN BEETS
GREEN CABBAGE
CARROTS
GREEN CHARD
GREEN LEAF LETTUCE
PARSNIPS
ALFALFA SPROUTS
SLICER TOMATOES
GARNET YAMS
CREMINI MUSHROOMS
FUJI APPLES
BARTLETT PEARS
KIWI BERRIES
BANANAS


Here's our menu plan for the week! 
We are still going to try to eliminate  unnecessary sugars, carbs and dairy. 


Breakfasts: We are eliminating things like pancakes, french toast, waffles etc and replacing with whole grains or eggs.


Quinoa Porridge with Cinnamon Apples Recipe
Green Eggs- Eggs w/ Spinach- Just throw a handful of cut up 
fresh spinach leaves in with your eggs and scramble


Lunches:

Delicious Egg Salad for Sandwiches Recipe
Snacks: 
Simple Guacamole dipped with carrots
Recipe:
1-2 Ripe Avocadoes
1-2 Cloves Garlic
Dash Salt
1-2 TBL Fresh Lemon Juice
Mash all ingredients together and enjoy!

Homemade Hummus served with Lavash Chips 
Dinners:
Monday:
 Hodie's Sloppy Joes Recipe
Easy Sloppy Joe's- Not the healthiest, but easy
Tuesday: 
Quick and Easy Pancit Recipe
 Wednesday:
Chicken Stir-Fry Recipe
Chicken Stir Fry (Uses Broccoli, Carrots and Celery)
  
Thursday: 

Friday: 
Leftovers

Saturday:
Easy Slow Cooker Pot Roast but I use homemade onion soup mix to be healthier

Menu Plan Monday- Week of June 21, 2010

I just wanted to highlight some great recipes from last week:

The Strawberry Salad was just about the best thing I've tasted in a LONG time! I used Cashews because that is what I had. I also added a rotisserie chicken that we got from Whole Foods...delicious mixed into the salad...my girls loved it!

Strawberry Salad with Shallot-Honey Vinaigrette Recipe

If you eat Pork, the Asian Pork Tenderloin was delicious...it made the pork so tender and juicy. I ended up taking the leftover marinate..(I didn't pour any into the dish) and reduced it down to make a gravy..I just added a little chicken stock and it thickened right up! I didn't have any of the Asian Chili Paste, so I just used Red Pepper Flakes... my husband added more, but it was perfect for the little ones!

Breakfasts: Oatmeal Bake ( w/ yellow peaches and bananas mmmm!), Baked Pancake, Eggs & Toast, Vegetable Frittata

Lunches: Chicken Salad, Leftovers, and Macaroni and Cheese with Peas

Snacks: Veggies, Fruit, Kefir Smoothies, Playgroup Granola Bars

Dinners:

Monday: Egg Salad Sandwiches (Uses Green Onions) with Nutty Brown Rice Salad

Tuesday: Strawberry Salad with Shallot Honey Vinaigrette ( have to make it again! (Uses Shallots, Strawberries and I use the Red Leaf Lettuce) Served with Cous Cous and Grilled Eggplant

Wednesday: Carne Asada Tacos (we chop up Cilantro and Tomatoes)

Thursday: Grilled Chicken with Jicama, Carrot and Green Apple Slaw (uses Daikon Radish)

Friday: Summer Squash w/ Rice and Chicken

Saturday: Easy Baked Tilapia (Uses Cauliflower)

Sunday: Veggie Pot Pie (put in any veggie you like!) I like to put in one sliced cooked chicken breast for protein

Menu Plan Monday- Week of May 17, 2010



This past week, we went back to having our full share of produce, and we also had an extra share of fruit which made our home very bountiful in the area of fruits and vegetables!

I thought it might be a little overwhelming, but in reality, it just made me focus more on using all of the fruits and vegetables we have...ie- we are actually eating healthier!

Here is a list of the produce we received:

Broccoli
Carrots
Collard Greens

Italian Parsley
Romaine Lettuce

Red Bartlett Pears

Fruit Share: Strawberries, Green Kiwis and Asian Pears

Last week I attempted to make eggplant french fries...and tried to bake them, but they came out really soggy. I think the recipe was a good one, but I should have pan fried them to make them crispy.

Here is the menu plan for this week:

Breakfasts: Oatmeal, Granola w/ Milk, Eggs & Toast, French Toast

Lunches: Leftovers, Chicken Salad sandwiches, grilled chicken salad (for me)

Snacks: Granola, Yogurt and a touch of Agave, Fruit, Veggies, Smoothies( w/ Kefir since Claire has an ear infection and is on antibiotics...got to be the good flora in her!)

Dinners:

Monday: Shepherd's Pie using carrots and celery and potatoes

Tuesday: Lentil and Green Collard Soup- Uses Collard Greens

Wednesday: Nutty Brown Rice Salad w/ Grilled Chicken and Sauteed Zucchinis very summery!

Thursday: Easy Pork Tenderloin w/ Broccoli, Salad and Near East Cous Cous

Friday: Spaghetti Dinner at our Church....a night off!

Saturday: Crisp Rosemary Chicken w/ Corn, Salad and Rice Pilaf

Sunday: Spicy Turkey Burgers w/ Glazed Dijon Carrots and Cucumber and Tomato Salad

Menu Plan Monday- Week of March 1, 2010

Well, this is only 4 days late...I haven't done that in a while!
Our lives have been completely crazy lately.
We were ALL sick at the same time....
yes ALL puking with the stomach virus...
it was like there was no one around to help us...
we were all just fending for ourselves.

Then the girls got colds and I got a sinus infection....

now, I have Shingles, yes Shingles...

its something that usually affects 60+ year olds, and I have it!!!
Amazing.
The meds prescibed to me cost $500 so I am doing a regiment of natural herbs and salves to try to heal internally.

I am going to do a post and let you know how healing Shingles naturally works! It only cost me about $100 for all of the supplements and herbs I bought, a lot less than $500.

All that being said, it is obvious to me that we are run down as a family, and me especially. In my last menu plan, I talked about the movie Food, Inc and the Book Real Food....

I have never been more inspired to continue
on in my journey to better equip my family through nutrition.

I recently found an organic farm Co-op that has everything I am looking for...
Organic Chickens
Grass Fed Beef
Stocks
Raw Milk
Raw Cheeses
Kefir
and many many other wonderful things!!

The farm is Miller's Organic Farm,
and visiting their site will give you an idea of the next level
I am looking for with my family.
I am not sure, but perhaps I could find enough people
and we could do a co-op right here in Palm Beach! Any takers?

Breakfasts: Hot Quinoa Breakfast Cereal, Eggs and Toast, Pancakes

Lunches:
Leftovers, Chicken Salad Sandwiches,

Snacks: Smoothies w/ Kefir and Berries, and
Playgroup Granola Bars

Dinners:

Monday: Chicken Pot Pie

Tuesday: Spaghetti w/ Meat Sauce and Garlic Bread

Wednesday: Leftover Chicken Pot Pie and Spaghetti- Still not back to making a meal every night yet!

Thursday:
Shepherd's Pie- I use my own recipe, but this one is pretty good too! Uses Carrots and Celery from Produce Share

Friday: Chicken Fajita's served with Sauteed Red Peppers and Onions from Produce Share

Saturday: Slow Cooker Beef Stew- Uses Carrots, Potatoes and Celery from Produce share. I will also have broccoli on the side.

Sunday: Easy Garlic Broiled Chicken with Carrot Rice and Chunky Jerusalem Artichoke Potato Mash

Menu Plan Monday- Week of February 22, 2010



If I wasn't inspired to buy grass fed beef from a local farm before seeing Food, Inc., I certainly am now.

The problem is that grass fed beef is VERY expensive. If I am going to move forward with changing my whole meal plans, budget and purchases, its going to take some work to maintain the frugal budget we are on now. I guess this is part of my frustration, my frustration for all Americans....in order to eat healthy, it costs WAY more than eating unhealthy.

My only hope and prayer is that something will change and there will be more restrictions on the types of food that can even be sold...because it is unhealthy. Not to put a downer on this nice Menu Plan post, but this has been a concern of mine even before I saw the movie. I want to provide the best for my family under the budgetary guidelines that we have set up, but doing so is getting harder and harder the more I equip myself with the knowledge of what really makes a healthy diet....more to come on this topic, for now....the menu plan!


Breakfasts: Hot Quinoa Breakfast Cereal, Eggs and Toast, Pancakes


Snacks: Playgroup Granola Bars, Roasted Red Pepper Hummus, Yogurt with Maple Syrup and Granola and Fruit, Winter Energy Cookies

Dinners:
Monday- Pizza- The family is sick, and I didn't have the energy to make anything...cheating day!


Wednesday- Spanikopita - VEGETARIAN (Never made from last week)

Thursday- Shepherd's Pie (Hopefully I'll have grassfed local farmed beef!)


Saturday- Slow Cooker Beef Stew with salad

Sunday- Leftovers

This week I will be picking up our produce share, and splitting it with my girlfriend until she can get a full share too! Here is what we will be receiving:

I recently checked out the book Real Food, What to Eat and Why...by Nina Planck. It is a really good reminder of the path I have been heading down when it comes to nutrition with my family.
