Menu Plan Monday: Week of February 14th, 2011

Again, I have been slacking off with my menu plans
and it makes such a big difference in
how, when and what we eat.
I even think that it makes a difference in how I organize
almost everything else in my week as well.
When I menu plan, I feel like I have my life together...
when I don't, well..you know.
Here is the list of produce we will be receiving on Thursday,
along with the rest of the produce we have yet to finish off from last time.

Broccoli Crowns
Green Cabbage
Celery Root
Green Kale
Romaine Lettuce
White Mushrooms
Garlic
Yellow Wax Peppers
Yukon Potatoes
Zucchini Squash
Pink Lady Apples
Blueberries
Kiwi
Mineola Tangelos
Bananas
FRUIT SHARES:
Blueberries
Tommy Atkins/Kent?
Red Grapefruit
Leftover Produce: Bok Choy, Carrots, Kale, Potatoes

Breakfasts:
Oatmeal Bake w/ frozen berries, Baked Pancake, Eggs & Toast + Cereal, keeping it simple this week.

Lunches: Leftovers, Peanut Butter and Jelly

Snacks:
Playgroup Granola Bars, Chocolate Oat Snack Cake (Treat!),Cucumber Salad

Dinners:

Monday: Valentine's Day- We actually went out, and I cheated and made the girls pre-made tortellini w/ broccoli

Tuesday: Beef and Bok Choy Curry- The recipe calls for Spinach, but I'm replacing it with Bok Choy and serving over rice.

Saturday: Take out- Let's face it, I'm 8 months pregnant, and I probably won't feel like cooking on Saturday...

Sunday: Slow Cooker Teriyaki Pork Tenderloin w/ Rice and Veggies

Thanks!
