Again, I have been slacking off with my menu plans
and it makes such a big difference in
how, when and what we eat.
I even think that it makes a difference in how I organize
almost everything else in my week as well.
When I menu plan, I feel like I have my life together...
when I don't, well..you know.

Monday: Valentine's Day- We actually went out, and I cheated and made the girls pre-made tortellini w/ broccoli
Tuesday: Beef and Bok Choy Curry- The recipe calls for Spinach, but I'm replacing it with Bok Choy and serving over rice.
Wednesday: Sausage, Kale and White Bean soup
Thursday: Lemon Herb Chicken w/ Rice, Ginger Carrots
Saturday: Take out- Let's face it, I'm 8 months pregnant, and I probably won't feel like cooking on Saturday...
Thanks!
