Am I really doing this? Really? I can't believe it! My first menu-plan since....I don't know, August? Lets just get right to it:)

Snacks: Family Fun Healthy Snacks (Great site)


DInners:

Monday: Shepherd's Pie served with Baked Acorn and Delicata Squash- Uses carrots, potatoes, celery and mushrooms for veggies

Tuesday: Chicken Fajitas- Heavy on the Cilantro...mmmmm along with Guacamole (uses Avo's)

Wednesday: Warm Chicken served with Arugula Salad w/ Citrus Vinaigrette

Thursday:Salad, Burgers and Homemade Fries

Friday: Beef and Spinach Curry w/ Rice

Saturday: Lemon Rosemary Salmon w/ Cous Cous and Salad

Sunday: Fish Tacos mmmmm back to Cali we go :)

Menu Plan Monday: Week of August 16, 2010

This week, I am starting the menu plan out by ordering pizza tonight...
of course,
this is just a technique I use so I can have time complete my menu planning... right?
(my daughter is helping me right now
by looking in the fridge and telling me what vegetables we have left over...
"We have peanut butter still,"
"No Lily, peanut butter is not vegetable."
"ok, then,we have beans and eggs and broccoli and chicken..."

Well, that should make for great vegetarian meals:)

Looks like our next 52 Week Preschool lesson
will be telling the difference between vegetables
and anything else that is edible.

Menu Plan Monday- Week of July 5, 2010

Just realized this is my 50th menu plan post !! Wow, thinking back as to how my organizational kitchen life has changed since doing these! MY weeks always seem to go better when I know I have all of the ingredients to make all of these meals! I may not get to all of them, or do them in this exact order, but at least its a great guideline!!

Menu Plan Monday- Week of June 21, 2010

I just wanted to highlight some great recipes from last week:

The Strawberry Salad was just about the best thing I've tasted in a LONG time! I used Cashews because that is what I had. I also added a rotisserie chicken that we got from Whole Foods...delicious mixed into the salad...my girls loved it!

Strawberry Salad with Shallot-Honey Vinaigrette Recipe

If you eat Pork, the Asian Pork Tenderloin was delicious...it made the pork so tender and juicy. I ended up taking the leftover marinate..(I didn't pour any into the dish) and reduced it down to make a gravy..I just added a little chicken stock and it thickened right up! I didn't have any of the Asian Chili Paste, so I just used Red Pepper Flakes... my husband added more, but it was perfect for the little ones!

Thursday: Grilled Chicken with Jicama, Carrot and Green Apple Slaw (uses Daikon Radish)

Friday: Summer Squash w/ Rice and Chicken

Saturday: Easy Baked Tilapia (Uses Cauliflower)

Sunday: Veggie Pot Pie (put in any veggie you like!) I like to put in one sliced cooked chicken breast for protein

Menu Plan Monday- Week of June 14, 2010

Here is the menu plan for this week:
We're really loving the Oatmeal bake (recipe below)- I highly recommend this one, it lasts our family 2 days! You can also decrease the sugar to your liking...
Don't forget- Your grill and slow cooker can be great tools to get you through the hot summers without heating up your kitchen.... check out the grilled pizza below!

Menu Plan Monday- Week of May 17, 2010



This past week, we went back to having our full share of produce, and we also had an extra share of fruit which made our home very bountiful in the area of fruits and vegetables!

I thought it might be a little overwhelming, but in reality, it just made me focus more on using all of the fruits and vegetables we have...ie- we are actually eating healthier!

Last week I attempted to make eggplant french fries...and tried to bake them, but they came out really soggy. I think the recipe was a good one, but I should have pan fried them to make them crispy.

Wednesday: Nutty Brown Rice Salad w/ Grilled Chicken and Sauteed Zucchinis very summery!

Thursday: Easy Pork Tenderloin w/ Broccoli, Salad and Near East Cous Cous

Friday: Spaghetti Dinner at our Church....a night off!

Saturday: Crisp Rosemary Chicken w/ Corn, Salad and Rice Pilaf

Menu Plan Monday- Week of March 22, 2010

Well, I'm officially coming out of recovery... After being admitted to the hospital two weeks ago, I finally feel like I am myself again. For those of you who didn't know, I had Shingles, and then I gave myself Viral Meningitis...yup, you give it to yourself from stress and having Chicken Pox as a child...go figure.

I took a break from all blogging, and am now seriously evaluating any and all activities I do besides taking care of my family.

That being said, I am no longer stressing about having a meal plan every week...although, it does help me with the flow and organization of things, I am no longer "requiring" my brain to accomplish it.

For a while now, I have been experiencing what I call "Adrenal Insanity." If one of my children falls( more like trips over shoe), my adrenaline starts rushing through my body. If I am trying to take a nap, and briefly fall asleep, my adrenaline wakes me up and starts to flow like crazy through my body. If I am in the passenger seat with my husband while he is driving, the adrenaline is flowing from the moment we leave the driveway until our destination (although, this may actually be a true need for adrenaline:) . So what does this mean? I am seriously stressed...to the max!

Before I got sick, we had many obligations at church, many groups we were a part of, stresses with finances, not to mention two children 3 and under. I am coming to realize that my body is wired very differently from my husbands. I react...he does not.

I am going to be making many changes with the groups I am involved in, after all, a good leader is excellent at delegating, right?

Ok, now that you are caught up with my life, and I was given the chance to vent for a little while, here is my menu plan for the week...

Breakfasts:
Hot Quinoa Breakfast Cereal, Eggs and Toast, Pancakes

Lunches:
Leftovers, Chicken Salad Sandwiches,

Snacks: Veggies and Smoothies

Dinners:

Monday: Happy Birthday April!!! Dinner will not be made by me :) Gotta love other people's birthdays!

Tuesday: Beef Stew- Leftover from the freezer

Wednesday: Sweet and Sour Chicken, Broccoli and Rice

Thursday:
Chicken Fajita's served with Sauteed Red Peppers and Onions from Produce Share

Friday:
Black Bean Veggie Burgers with Salad and Baked Potatoes

Saturday: French Leek and Ham Shepherd's Pie

Sunday:
Toscana Soup except I will be using Chard instead of Kale
